I agree that the best thing about the Bastide de Tourtour is the view. It is very expensive and we also skipped dinner (only because we waited to order for 40 mins on our first night!). The best 2 restaurants in Tourtour are the Relais St Denis (last restaurant on the right if you're walking away from the Church) and La Table. La Table is fine dining and you do need to book a few days in advance. Relais St Denis is fabulous, both Anthony and Nicholas looked after us so well - we dined there 4 times in a week and the food is wonderful.
The Bastide really needs to start appreciating their customers more and improving their facilities. We had a Prestige room with a panoramic view - but unfortunately the decor was very tired looking. We didn't have breakfast at the Bastide (nor did many of the other guests), instead we wandered to the village for fresh croissants and lovely coffee - much better than having to tolerate rather stuffy waiters.
Also, have you ever stayed in a hotel where they charge you to use the jacuzzi????? The Bastide charge for everything, even ice which I requested to help soothe a sprained ankle!!!

I'm afraid the only positive thing I have to say about this place is that it has a wonderful view - but I'm sure the same view could be enjoyed from somewhere much nicer. Overall, we found this place gloomy, stuffy and overpriced. The "luxe" room we were given had a small terrace and lovely view over the pool and distant hills, but the room itself was small for the price, the bed and bed linen weren't great, and the decor was very "tired". There were no fresh flowers, the peanuts cost E6.50...
But what really set me off was that we were unapologetically charged an additional 10% on our bill, as we were slightly late checking out - the line was "This is in the guest book and is added automatically". They could at least have phoned the room to tell us.. and it wasn't as if there were other guest queueing up at the door!
Tourtour itself is a lovely village and well worth a visit - we skipped dinner at the Bastide, and instead ate at a lovely restaurant in the village square - can't a remember the name, but apparently it's mentioned in the Lonely Planet (Provence), and if approaching from the church it's the last restaurant on the right.
If staying in this region I can personally recommend the Bastide du Calalou near Aups - much better value, friendly, and excellent food.
