The location was lovely, I went for the Spa treatment.
Two major problems.
The smaller one, one of the masseurs was definitely not trained, he gave a very amateur rub down, with almost no aromatherapy other than one scented towel on our faces, and blasted (very very loudly) some pop music album. We thought the whole thing was a joke, but alas...no it was not.
Our other massages were great. So only an odd one out of four treatments.
MUCH more serious. We were given lockers with keys. I locked away my wallet, and as a serious traveller, I doublechecked the lock both before and after the massages. The lockers were correctly locked. BUT, sometime during our massages, 200 Euros were removed from my wallet. The hotel insisted that another hotel guest must have taken it, if I did not lock it properly. I DID lock it properly. So, either the hotel has some corrupt staff, or someone has access to their master keys or has copies of their locker keys. Either way, my massage was not worth the extra 200 euros.
Buyer beware. Locking your possessions away is not enough in this place!

The entrance to the Dolce Sitges is impressive, high on the hill, it has a wonderful view across the sea from the terrace outside the 2 entry doors. The conferencing facility is on the left and the hotel reception on the right. Service at the desk was very slow and my room was not ready (even though it was 1430 and should have been). I had to beg for the concierge to take care of my bags whilst I went out for the afternoon. I would have liked to freshen up but it seems that was only possible in the ladies loo.
Once in the room it was very spacious (I had upgraded to an executive room) with a couple of nice touches such as a glass of the local wine, a few small nibbles and a luggage tag.
The biggest attraction for this hotel is also one of the down sides - location - when I was there the road was under construction and so you had to get a cab to anywhere (including the beach and the golf club), it is a 10-15 minute cab ride away from Sitges town and although has great views has absolutely nothing else in the immediate area.
The bar is nice enough but it is the through route to the restaurants and the bedrooms so has a contant flow of traffic through it; there are a few books, couple of pool tables and dart boards but it isn't a very relaxing area. The telescope placed strategically out to sea is a nice distraction but you do tend to get "bumped" by people going past on their way in and out of the hotel. For the money I would opt for a hotel closer into town. In summary - the service was average to poor, the food at dinner was atrocious (breakfast was OK), the workout area (I wouldn't go so far as to call it a gym) was cramped and far too hot, you had to purchase a swimming cap to use the pool and there was noise audible from the corridor at night.

I was planning a special weekend at Dolce Sitges with my girlfriend, but the hotel was not as good as expected.
I will suggest to downgrade a star. It's a good 4 star, but not a 5 star!
The access road is under construction and it was difficult to find. We booked a Superior room and we get a nice room but small for being a superior on a 5 star.
The glass on the window was broken, and window doors didn't closed properly, so we wake up several times at night as there were trains passing close to the hotel.
The air conditioning and heating was very soissy so we had to switch it off and ask for another blanket at night.
The image on TV was not clear Breakfast buffet is OK but better ask for expresso coffee! The regular coffee they serve is nasty! Also orange juice should be natural on a 5 star!
The surrounding are nice and the bar area and Spa is fine but nothing impressive.

Overall my husband and I had a very pleasant stay at the Dolce Sitges. Unfortunately, we got off to a very bad start. We arrived around noon tired and travel stained for a three day conference. While it was true that check in wasn't until after 2:00 pm, many of the conference attendees were arriving and getting into their rooms. The desk clerk informed us that the room assigned to us wouldn't be ready for two hours. A really good hotel would have switched our room with a guest who hadn't arrived yet.
Our room, once we got into it, was spacious, nicely decorated, with a comfortable bed. We had a pool view which meant that, during the day, there was a lot of noise from guests that had drunk too much at the outdoor bar. At night it was very quiet.
The conference center was excellent and everything ran very smoothly. We found the hotel food very good. I was unable to book any time at the spa because they were full but the exercise equipment was adequate.
Sitges itself is far from the hotel and difficult to reach without a car. It is not the most attractive seaside town--dirty, crowded, etc. I spent a morning hiking around the Garraf reserve with a guide. --interesting but better hiking can be found in the Pyrenees. I don't think the area is worth a return visit but the hotel--once we got in--was very pleasant.
